These Healthy Banana Muffins are as tasty as a fresh, out of the oven banana bread. Gluten free, lactose free, and refined sugar free these muffins are a great option for a healthy breakfast or snack.

Packed with fiber from oat flour and bananas, good fats from coconut oil and eggs, low glycemic coconut sugar to sweeten things up and the most amazing smell of vanilla and cinnamon.
My kids love baking these muffins as much as they like to eat them. With just a few steps and 25 minutes in the oven, these will be ready to be indulged.
Save those extra ripe bananas, they contain the perfect balance of starch and sweetness and are perfect for muffins and smoothies. Bananas are packed with nutrients. They provide potassium (hello cramps), vitamin B6, C and lots of antioxidants. Banana is one of those fruits that should be eaten everyday. They are great for gut health due to its fiber content. Bananas are known to ease stomach pain and indigestion. But the best part about bananas is that they are rich in tryptophan, an amino acid proven to boost our serotonin levels. If you need a little happiness in your life try eating a banana or even better, a Banana Muffin.

Ingredients Needed
- 1 cup of oat flour
- 1/2 cup of gluten free flour
- 1 tsp of baking powder
- 1/2 tsp of baking soda
- 3 ripe bananas
- 2 eggs
- 2 tps of cinnamon
- 1/2 cup of coconut sugar (or maple syrup)
- 1/4 cup of melted coconut oil
- 1 tsp of vanilla extract

How to Make
These Healthy Banana Muffins are so easy to make, so let’s start by:
- Preheat the oven to 350F.
- Gather and whisk the dry ingredients in a large bowl (oat flour. gluten free flour, baking powder, baking soda, and salt).
- In a small bowl, start by mashing the bananas. Add the remaining of the wet ingredients(coconut oil, sugar, eggs, vanilla, cinnamon) and whisk until fully combined.
- Combine the wet and dry mixture together and gently stir until smooth.
- Line a muffin tin with paper or parchment muffin liners. This batter should be the perfect amount for 12 muffins.
- Bake at 350 degrees for 22-25 minutes.
- Let them cool and enjoy!
Chef Tips
These muffins are delicious as it is, but you could add in:
Chocolate chips, nuts. You could also top them with rolled oats or brown sugar.
Keep them in an airtight container for 3 to 5 days or freeze them for 3 months. When ready to be consumed just take them out of the freezer and leave them in the refrigerator overnight.
