My grandmother used to say this soup has the power to raise the dead. The ingredients are packed with vitamins and minerals, so she would make me a warm bowl right when I started showing symptoms of a head cold. This delicious soup still brings so many memories of my childhood. Especially during those elementary school years when we catch all sorts of viruses and are constantly sick. This soup helps boost and strengthen the immune system. So every time my kids are getting sick, or when the weather takes a turn, I know it’s time to make Chicken Vegetable Soup.
The healing ingredients in this soup include:
Chicken– a high quality protein that can help boost your immune system. Chicken also provides vitamins and minerals such as vitamins B3, B9, zinc that aid in immune function.
Carrots- Rich in vitamin C, betacarotene (vitamin A) and B vitamins, which is vital for immunity. Carrots also provide lots of antioxidants that are great from vision, skin, bones, digestive system.
Taro root and potato– rich in vitamin B, E, C, manganese, potassium, antioxidants, and resistant starch for digestive health and energy.
Celery-this is an excellent source of anti-inflammatory compounds that helps prevent inflammation.
Onion and Garlic- Great for fighting infections due to its anti-microbial properties. High in vitamins and minerals such as quercetin found in onions, it is great for supporting the immune system.
Tomato– high in lycopene, an antioxidant with several health benefits for the immune system, vision, cardiovascular health, bones, etc.
Kabocha Squash– low in calories, but high in nutrients.This can be great for gut health, due to its insoluble and soluble fiber.

How to make it
- Start by seasoning the chicken with garlic salt/black pepper and sear it with some olive oil.
- Using a dutch oven, cook the chicken for four minutes on each side. Set aside. In the meantime, chop all the vegetables.

- Add the onion, garlic and celery into the pot. Add a little more olive oil if needed. Soften it for 3 minutes, then add the carrots and tomatoes. Cook for another couple of minutes or until tomatoes become soft. Lastly, add the root vegetables (kabocha squash and potatoes), broth, rice and spices (garlic salt, turmeric, black pepper). Cover it with water until the pot is filled to the top.
- Cut your cooked chicken into small cubes or shred it. Add it to the pot and allow it to simmer for 10 to 15 minutes or until vegetables are soft and rice is cooked.

Instant Pot method
Start by searing the chicken until golden brown, then add the vegetables in the order mentioned above. Add the broth, spices, water, rice and cook on manual for 10 minutes.

Ingredients
2 Tbsp of olive oil
3 chicken breasts (cut it into small strips) or thighs
2 large carrots
2 taro roots
1 Yukon gold potato
1 small onion
3 garlic cloves (minced)
2 celery stalks
1 tomato
3 small slices of kabocha squash
16.9 oz carton of bone broth or 2 cups of homemade bone broth
2 tsp of garlic salt
1 tsp of turmeric
1 tsp of black pepper
1/2 cup of Basmati rice
water to fill

Chef Notes
- You may also use a rotisserie chicken already prepared. Just cut it into small pieces and add it to the soup.
- Other spices such as cayenne pepper may be added for extra heat.
- Fresh herbs such as green onions and cilantro are great to add at the end.
