Every year when the leaves starts changing and the weather starts cooling down I make sure to stock up with all my favorite seasonal fruits, and apples make the top of my list. Apples are not only great for you, but they are delicious in any way such as whole, steamed with cinnamon, sauce and in baked goods. No need for fancy candles because your kitchen will smell amazing with this recipe.
Healthy Apple Cinnamon Oatmeal Bread

Ingredients Needed
All these ingredients are easy to find and you probably already have on hand. You will need:
Oat Flour. I prefer to double check my oats came from a gluten free facility. My favorite way to make oat flour is to blend oats in the blender until a fine flour consistency.
Coconut Sugar. My sweetener of choice. I love using coconut sugar because it has a low glycemic index and the taste reminds me of pure brown sugar. You can also use Demerara, or brown sugar as well.
Coconut Oil. Coconut oil contains medium-chain triglycerides (MCTs) that will speed up your metabolism and help you feel more energized. It is also great for skin, hair and heart. But you can also use any mild flavored oil of choice.
Eggs. Very nutrient dense and packed with vitamins and minerals. It’s also a complete protein. Eggs will bind all the ingredients together.
Salt. A pinch of salt will bring out the flavors of this bread.
Cinnamon, Cloves and Nutmeg. These spices will add a deliciously subtle flavor.
Lemon. The juice and zest of one lemon.
Baking Powder. This will help the bread bake and rise.

How to Make Apple Cinnamon Oatmeal Bread
To begin pre heat the oven to 350 degrees F and line a 8×4 loaf pan with parchment paper or nonstick spray.
In the blender, add the roughly chopped apples, eggs, coconut oil and sugar, spices, lemon zest and juice. Blend until smooth and well incorporated.
Pour this wet mixture into a large bowl then add the dry ingredients together and combine until smooth. Add and stir the baking powder last.
Pour the batter into baking dish.
Bake for 30-40 minutes, or until a toothpick inserted comes out clean.
Allow it to cool for 10 minutes.
Chef Tips
Add in raisins,dry cranberries or nuts for extra flavor.

1/2 cup coconut oil, melted
3/4 cups coconut sugar
3 eggs
1/2 teaspoon cloves
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1 lemon (zest and juice)
1 tablespoon baking powder
1 pinch of salt
